Operating a restaurant can be a tremendous task and among your top goals is producing delicious food to keep customers coming back. Although this is an ultimate objective, a foodservice operator must never forget about procedures and rules mandated by FSSAI (Food Safety and Standards Association of India).  Hence, our Score on the Doors (Food Hygiene Rating) Scheme offers Food Business Operators (FBO) a fantastic opportunity to show their customers how seriously they take food hygiene.
 
Get a good rating, get recognised
The Score on the Doors Scheme is designed so that all Food Business Operators, no matter how small can achieve the top rating by meeting the legal FSSAI requirements – there is no gold plating – any improvements that businesses need to make to get a higher rating are no more than is already required by FSSAI.
 
Your Score on the Doors
Your business will be given a rating following a planned inspection by a food safety officer. Your rating depends on the standards of hygiene found at the time of the inspection. Your business can be given one of six ratings. These are on a scale from ‘0’ at the bottom, which means that urgent improvement is necessary, to ‘5’ at the top, which means that the business was found to have ‘very good’ hygiene standards.
 
Calculating your rating
The rating you are given will depend upon:
  • How hygienically the food is handled – preparation, cooking, re-heating, cooling and storage;
  • The condition of the structure of the buildings – the cleanliness, layout, lighting, ventilation and other facilities;
  • Confidence in management – how the business manages what it does to make sure the food is safe and confidence that the standards will be maintained in future, &
  • Food Safety Management System – food safety policy, HACCP (Hazard Analysis Critical Control Point),, and other safe system of works
The food safety officer will explain to you if there are any improvements needed, what they are and how you can achieve a higher rating. Any business should be able to reach the top rating.
 
Advertising good hygiene to your customers
You can tell consumers how good your hygiene standards are by putting your rating sticker in the window or on the door, and your certificate on display – you will be given these within 14 days of the inspection. This means that your consumers can easily see your food hygiene rating when they visit your business.
